Breakfast Tacos with homemade tortilla, crispy bacon, scrambled egg, capsicum and BBQ sauce. Nothing is better than waking up to healthy delicious breakfast.
I finally succeed in making my own tortilla. *Clapping hand*. Yes, I’m so happy that I finally succeed after so many trial and error. Sad at the same time because I didn’t take any picture. I thought that it will be another error and didn’t bother to take a picture at all. I didn’t even know that this time will be a huge success. My first time making tortilla is a huge failure that it turns out so dry and hard that it is not even edible.
I realised that the reason why my tortilla or any flatbread turns out so dry is because I didn’t cover it with clothes. I couldn’t believe that covering the dough with the clothes will make so much different. Anyways, I will be making it again soon after I finished up my tortilla, and post it online soon with the step by step photos.
I’m so excited in using my own tortilla and make this breakfast tacos with bacon, egg and capsicum. We love breakfast tacos with bacon and scrambled egg. This breakfast taco is inspired from McD. We used to live close to McD before where we would go to McD for breakfast every weekend. I love their wrap with bacon and egg. After moving out from there, I decided to make my own breakfast tacos, mostly in the weekend.
Yes, you might realised that McD doesn’t have capsicum in their scrambled egg. I thought capsicum would be great in this breakfast tacos to add the extra crunchiness and healthiness. Bacon is too fatty, and it need some greens to balance it out. I couldn’t believe that I actually voluntarily adding green to my breakfast when I’m not a veggie person.
Having this delicious breakfast tacos in the weekend just make our day. What’s more is that I don’t have to clean my messy kitchen from the bacon anymore. Dydy love bacon so much, and I hate it not because of the fat, but because of the cleaning afterward. The oil from bacon always splutter everywhere even though I didn’t even put oil during pan-frying. The bacon itself is so fatty.
Anyways, I recently found out that you could bake bacon instead of frying in the stove. I gave it a try today to make my breakfast tacos. And, magicly, 15 mins in the oven, the bacon turns out really crispy and nice without any mess. Dydy would be happy to know that he get to eat bacon more often now that I know the secret in cooking bacon.
To make the scramble egg, I first heat a tablespoon of oil in a pan, and fry capsicum for 1 to 2 minutes.
Then, I add my lightly beaten eggs into the pan.
Keep scrambling it until the eggs are cooked. That’s why it’s called scrambled eggs.
Once scrambled eggs are cook, I heat up my tortilla, and arrange everything in my table. To assemble, place scramble eggs on top of tortilla, then top with few bacon and bbq sauce.
- 2 tortilla wrap
- 4 eggs, lightly beaten
- 2 middle bacon
- ½ small capsicum
- bbq sauce
- Arrange bacon on the baking sheet and bake for 15-20 mins at 200C degree.
- Heat oil in a pan, and fry capsicum for 1 to 2 minutes.
- Add the lightly beaten egg.
- Scramble the eggs until the eggs are cooked through. Set aside in the plate.
- Warm up tortilla in the pan for few minutes.
- To assemble, add scramble eggs with capsicum on top of tortilla. Top with few slices of bacon and drizzle with bbq sauce.
