Who say cereal only for breakfast? This Cereal Butter Prawn is an absolutely amazing dish make with crispy and spicy cereal flakes. Serve with steam rice.
Cereal prawn is one of the most common dish that my parents used to order in Chinese restaurant. As a kid, I’m quite a picky eater that I don’t eat much veggies and other stuffs. But, what type of kids in the world would hate crispy cereal prawn? It’s not the prawn that I love, but the crispy cereal that is pour on top of the prawn. It’s a heaven.
I would just lick the cereal from the prawn shell cleanly, before peeling off the prawn. I still do it the same way even now. Then, I would dip the peeled prawn again in the cereal mix and enjoy it with steam rice. I also saw some people eating it in a different way, that they also eat the shell together with the prawn. I tried once, but the shell just couldn’t pass my throat.
It has been so long that I haven’t ate this cereal butter prawn. Yesterday, I woke up in the morning, and just feel like eating this cereal butter prawn again. This time, I make an adult version with more intense chilli in it. I couldn’t eat chilli when I was a kid. If I see any chilli in any dish, I won’t even touch it anymore.
Now, everything without chilli feel tasteless to me. Since I meet Dydy, I learned to eat so much chilli, to the extent that I could eat more spicy food that him. Sometime, he will even complain that the food I make is too spicy for him and he would eat with yoghurt to reduce the spiciness. Yes, did I ever tell how Indian eating rice with yoghurt? I know it sounds strange, even now, I still couldn’t eat with yoghurt yet. For me, yoghurt need to be sweet, but Dydy eat it with rice and savoury dish.
Well, at some point, it is good for health to be able to eat greek plain yoghurt than fruity yoghurt that is claimed to be 99% fat, but contains too much sugar in it. And, eating yoghurt everyday is a good thing for your digestive. It’s just that, if there is no fruits in the yoghurt, I just couldn’t eat it. And, yes, I hate greek plain yoghurt. It taste sour and ……. yuck, not delicious at all.
We were discussing the other day, whether our little princess will be more like Dydy or Me, loving sweet fruity yoghurt or plain savoury greek yoghurt. Dydy was determined that he will teach his daughter to always end the meal with yoghurt. Well, I’m pretty sure that my baby will prefer to end the meal with sweet dessert yoghurt instead of savoury. We are so excited to find out what our little princess will love.
Anyways, back to my cereal butter prawn, it is very simple and easy to make, except the deep-frying process. I hate deep-frying as the oil will splutter everywhere in the kitchen, and it took me ages to clean up everything. However, it’s not like I could bake the prawn. Well, I could actually, but I won’t get the crispy shell which is crucial in this dish.
To make it more crispy, I mixed 1/2 cup of oats and panko breadcrumbs. The oats that I have is rolled oats, which is less grainy. Therefore, I grind it for few seconds before mixing it with breadcrumbs so that both has similar textures.
Here’s the ingredients to make cereal butter prawn:
- 8 Large prawns
- 1/2 beaten egg
- 1 tablespoon plain flour
- 1 tablespoon corn flour
- 1/2 teaspoon salt
- 50 g unsalted butter
- 2 springs curry leaves
- 10 small red chilli, sliced
- 1/2 cup rolled oats (grind for few seconds)
- 1/2 cup panko breadcrumbs
- 1 teaspoon chicken stock powder
- 1 teaspoon salt
Trim the leg and devein the prawn with the shell on. Wash thoroughly.
Add egg, plain flour, corn flour and salt to the prawn. Mix until combined.
Deep fry the prawn until prawn is cooked. Drain and set aside in paper tissue to absorb excess oil.
Mix grind oats, panko breadcrumbs, chicken stock powder and salt in a small bowl. Mix until combined. Set aside.
In a pan, melt butter. Add curry leaves and chilli. Fry for few minutes until you can smell the curry leaves flavour.
Add cereal mixture and keep frying until cereal mixtures turn golden brown.
Add fried prawn, and toss around until prawn is evenly coated with cereal.
Serve with steam rice.
