Few years back, baby back ribs is that kind of luxury food that I love to enjoy for some special occasion like birthday or anniversary. Dydy would take me to Tony Roma’s or Hurricane to enjoy this amazing baby back ribs where the meat is so tender that it actually fall off the bone. Every bite is just so delicious and full of flavour.
One slab of baby back ribs is never enough for both of us. Well, one slab looks quite huge for one person. But, Trust me, once you start digging in, you never want to share your slab of baby back ribs with others. Sometimes, one slab is not even enough for Dydy. That’s how delicious is those fall off the bone baby back ribs.
There is this one time, when my parents came to visit us in Sydney. We took them to Hurricane for the Baby Back Ribs. I still remembered how they look at me and Dydy enjoying the full slab of baby back ribs with the stare of “Oh My Godness!! What happen to my daughter”. Why?? Because back in Indonesia, we always share the full slab of baby back ribs with the whole family. I have big family, so basically, 8 people are sharing one slab of baby back ribs. Now, you can understand why my parents look confused when I eat the full slab by myself.
One day, when I went to butcher, I found out that they actually sell the baby back ribs. I’m super excited and couldn’t wait to cook with it. I spent almost whole day researching recipes to make this baby back ribs. And, it turned out better than what I expected to be. I expected my first trial will be a super disaster, but it turned out so delicious with the meat fall off the bone.
Since then, I said my farewell to Hurricane and Tony Romas. Instead of paying so much there, I make my own baby back ribs at home. I used to make it almost twice a month for Dydy, to the extent that he said he doesn’t feel like eating ribs anymore. I couldn’t believe I haven’t posted this recipe in my blog until now.
You won’t believe how easy it is to make this fall off the bone baby back ribs. The secret is cooking the meat in the oven in a low heat but long period, and of course the sauce base. First, prepare the sauce base. Mix all of the ingredients in the saucepan. Bring the sauce to boil.
And simmer it until the sauce has thickened. Set it aside to cool.
Pre-heat oven to 150 Degree celsius. Once the sauce has cooled down, rub it on both sides of the ribs as evenly as possible. Be generous with the sauce. Repeat it with another ribs. Keep few tablespoons of the sauce aside for final glazing later.
Wrap the ribs as tight as possible, and arrange it in the baking pan.
Bake for 2 – 2.5 hours. Open the aluminium foil. By this time, the meat should have shrunk by about 1 inches long. Baking the meat in a low heat for 2.5 hours will ensure that the ribs will be tender and fall off the bone.
Glaze the ribs with the leftover sauce, and bake for 5 to 7 minutes or until there is charred sign in the ribs. Repeat it again with another sides of the ribs.
Served with baked corn.
- 1 kg baby back ribs (2 slabs of ribs)
- ½ cup ketchup/tomato sauce
- ½ cup vinegar
- ¼ cup golden syrup
- 1 teaspoon sugar
- ¼ teaspoon salt, add more to taste
- ¼ teaspoon garlic powder
- ¼ teaspoon onion powder
- 1 teaspoon tabasco pepper sauce
- 2 baked corn
