Indian sweet is amazing especially with the hint of cardamom. This gajar ka halwa is the first Indian sweet that I tried 2 years back. It’s so sweet, creamy and the texture is so unique. It is so quick and easy to make at home. Moreover, it nevers stays more than 1 day. I just make it in the morning, it will be all gone by afternoon. That’s how much Dydy love this gajar ka halwa sweet. I also make lentil cashew ladoo, which is another delicious Indian sweet that is full of protein.
I love this sweet so much, but I don’t like the grating part. I don’t have the grating machine, so I grated carrots manually with hand. The grater is so sharp, and with the shape of the carrot, 9 out of 10 times, I always ended up hurting my fingers during grating process. What’s more is that it takes me 2 hours to grate 500g of carrot, and yet, it takes less than 2 hours for Dydy to finish up everything. Now, I always divide it in 2 container, so that Dydy won’t touch my share of Gajar ka halwa, otherwise, I will always ended up with only 1 spoon of gajar ka halwa.
Enough of my complaining, let’s make this carrot sweet gajar ka halwa now. I used black carrot today to try how different it taste compare to normal carrot. It turns out to be the same, and honestly, normal carrot make this gajar ka halwa looks more tempting. I put up the final pictures of the normal gajar ka halwa with orange carrot. You see what I meant rite? It looks more colourful and tempting instead of black dessert. With black carrot, it kinds of looks strange with a black gajar ka halwa although it doesn’t taste that much different.
Here’s the ingredients in making gajar ka halwa:
- 500g carrot, grated. I get around 4 cups of grated carrots
- 2 cups milk
- 1 cup sugar
- 6 tablespoon ghee
- 1/4 teaspoon cardamom powder
- cashews to decorate
Heat up ghee in a pan, add grated carrots and fry until carrots are soft.
Then, add milk and cook until milk is reduce by 70%. Keep stirring occasionally so that it doesn’t stick on the pan.
Once the milk has reduced, add sugar and cardamom powder. Mix until all combine. Feel free to reduce the sugar if you don’t want to put that much sugar. I tried to reduce it up to 1/2 cup once. It is more healthy, but Dydy don’t like it as he said that Gajar Ka Halwa supposed to be really sweet. Therefore, if you are concern about the sugar amount, add little by little until you feel it is sweet enough for you. Top with cashews on the top and gajar ka halwa is ready to be served.
