All in One Breakfast Muffin Cups with sausage, eggs, potato, red pepper, cabbage, spices and cheese. Quick and delicious make ahead and freeze breakfast.
Winter is coming here in Sydney, and I just want something warm and comfort for breakfast in the morning. I like to make this breakfast muffin cups ahead in the afternoon, to enjoy for breakfast the next morning. During winter time, I really don’t have energy and will power to wake up early and make warm breakfast. Who don’t want extra minutes to just wrap yourself in the warm blanket?
The next morning, I usually pop it in the oven to bake for 10 minutes to warm it up. This breakfast muffin cups are full of nutrition with the balance combination of sausages and veggies. Not to mention that each cup is bursting from spices. It’s a total comfort breakfast treat. The small size is also perfect for breakfast on the go.
Dydy love sausage once in a while with a toast and eggs. He will request to have sausage for breakfast at least once a month. In supermarket, they always sell sausages in a pack of 8. How are we supposed to eat so much sausages? I wonder why they don’t sell sausages per slices instead of per pack.
Dydy will only have sausages for breakfast maximum of 2 days. More than that, he don’t want to touch sausage anymore. I hate sausages, it’s so meaty and I just couldn’t eat it. Therefore, once Dydy is sick with his sausage, I will throw all of the leftover sausages and mixed with vegetables to make it less meaty.
Today, I added potatoes, my leftover purple cabbages, and my leftover half of red pepper to my sausages and make healthy sausages and veggies breakfast muffin cups. It’s delicious and I would love to have this every morning during this cold winter.
This breakfast muffin cups kinda of looks like mini version of frittata. It’s good for snacks, brunch or lunch box. There’s nothing better than waking up to this cute breakfast muffin cups with sausages and veggies. It is also a great way to hide veggies and trick small kids. I have to chopped the veggies really small to hide it inside the breakfast muffin cups, so that Dydy didn’t even notice that there are veggies. Otherwise, he won’t even eat the veggies.
This breakfast muffin cups are really simple to make. Here’s the ingredients to make this mini breakfast muffin cups:
- 1/2 onion, finely chopped
- 1/2 capsicum, finely chopped
- 2 garlics, finely chopped
- 4 sausages, remove the skin, and cut into small pieces
- 2 eggs
- 2 potato, grated
- 1 spring cilantro, finely chopped
- 1/2 tsp chilli powder
- 1/2 tsp coriander powder
- 1/4 tsp cumin powder
- 1 cup parmesan
- 1/2 cup purple cabbage
- salt and pepper to taste
Firstly, Preheat the oven to 200C degree and heat up oil in a pan, add chopped onion and garlics. Fry until onion start to turn transparent. Add sausages, and continue to fry for few more mins until sausages turn brown and cooked through.
In a small bowl, combine other ingredients, potato, capsicum, cilantro, eggs, chilli powder, coriander powder, cumin powder, parmesan, purple cabbage and salt and pepper.
Once sausages are cooked, add it into the small bowl, and mix until all combines
Spray non-stick olive oil to the muffin tray. Spoon the mixture into muffin tray and bake for 25 minutes.
Remove from oven and let it rest in the tray for 5 to 10 minutes before serving.
