Spotted!! Lamb Chops sale in my local grocery store. The first thing I do is quickly pick a box of it, and will think about what to make later. At home, I seldom make a grill lamb or beef steak. It’s not because we don’t like it or too expensive, but the thought of having a big slab of meat in the plate just sounds too taunting for us.
Me and Dydy grow up in an environment where we always have a range of meat, seafood and veggies in the table for sharing with the whole family. So, basically, we always ended up eating one or two slices of meat and veggies per meal instead of having a big slab of lamb meat by yourself.
Sometimes, it’s good for change and I try to challenge myself to eat the lamb by myself. Today, I decided to make it to Thai lamb chops with Thai marinade and serve with Green papaya salad. Did I tell you guys before, that Thai is the closest combination between Chinese and Indian? I think it’s just a perfect combination of both cuisine with the combination of sour, sweet and spicy at the same time.
It’s a perfect combination to serve this thai lamb chops with green papaya salad as both of us love this type of salad. Moreover, green papaya is currently in season and there is just so much green papaya in the market. I picked up a small to medium size one enough for two people. If you couldn’t find green papaya in your local market, you could search for Thai grocery store. Some store might have stock of green papaya.
When I’m making this thai lamb chops dish, I realise how easy it is to prepare western type of food compared to Chinese or Indian cuisine. In this lamb chops dish, I just marinate the lamb chops with Thai marinade, and let the sauce do its magic by itself for few hours. Then, when ready to be serve, I just grill the thai lamb chops for few minutes depend on your preference, and dinner is ready.
While in Chinese or Indian cuisine, I usually need to spend 1 to 2 hours in the kitchen to prepare for dinner. Because it’s only 2 of us here, I only make 2 different dishes per day. I couldn’t imagine how my mom always prepare 4 to 5 dishes everyday just for one meal for the whole family of 8. It would be quicker for her if she just have to marinade 8 lamb chops instead of cooking 4 to 5 dishes.
Okay, let’s get to the cooking part. This is the easiest dish with less time required. Perfect for busy mom out there. Here’s what you will need:
Lamb Marinade:
- 2 forequarter lamb chops
- 1 shallot
- 1 tsp ginger
- 2 garlic cloves
- 2 red chilli
- 1 tbsp fish sauce
- 1/2 tbsp soy sauce
- 1/2 tbsp caster sugar
- juice of 1/2 lime
Papaya Salad:
- 2 cups grated green papaya
- 3 red chilli, chopped
- 1 lime juice
- 1.5 tbsp fish sauce
- 1/2 tsp garlic minced
- 1 tbsp caster sugar
Start with making the Thai marinade sauce by grinding all marinade ingredients except the lamb chops.
Rub the marinade sauce generously over the lamb chops on both sides. Let it marinate for at least 1 hour so that the flavour can get into the lamb.
While the lamb is marinating, prepare the papaya salad by start grating the green papaya. I bought small papaya salad, and get around 2 cups of grated green papaya.
In a small bowl, add chopped chilli, lime juice, fish sauce, minced garlic and caster sugar. Mix until all combine. Set it aside in the fridge along with the grated green papaya until ready to be served.
Heat up a pan, and spray olive oil on it so that it doesn’t stick to the pan.
Once pan is hot, place lamb chops for 3 to 4 minutes each sides or according to your preferences.
Remove lamb chops from the pan, and cover loosely with foil for 2 – 3 minutes before serving.
Pour the green papaya salad sauce on the grated papaya, and mix until all combine.
Serve lamb chops with green papaya salad.
