Thai Style Lamb Chops with Green Papaya Salad

Ingredients
Lamb Marinade
  • 2 forequarter lamb chops
  • 1 shallot
  • 1 tsp ginger
  • 2 garlic cloves
  • 2 red chilli
  • 1 tbsp fish sauce
  • ½ tbsp soy sauce
  • ½ tbsp caster sugar
  • juice of ½ lime
Papaya Salad
  • 2 cups grated green papaya
  • 3 red chilli, chopped
  • 1 lime juice
  • 1.5 tbsp fish sauce
  • ½ tsp garlic minced
  • 1 tbsp caster sugar
Instructions
  1. Start with making the Thai marinade sauce by grinding all marinade ingredients except the lamb chops.
  2. Rub the marinade sauce generously over the lamb chops on both sides. Let it marinate for at least 1 hour so that the flavour can get into the lamb.
  3. While the lamb is marinating, prepare the papaya salad by start grating the green papaya. I bought small papaya salad, and get around 2 cups of grated green papaya.
  4. In a small bowl, add chopped chilli, lime juice, fish sauce, minced garlic and caster sugar. Mix until all combine.
  5. Set it aside in the fridge along with the grated green papaya until ready to be served.
  6. Heat up a pan, and spray olive oil on it so that it doesn't stick to the pan.
  7. Once pan is hot, place lamb chops for 3 to 4 minutes each sides or according to your preferences.
  8. Remove lamb chops from the pan, and cover loosely with foil for 2 - 3 minutes before serving.
  9. Pour the green papaya salad sauce on the grated papaya, and mix until all combine.
  10. Serve lamb chops with green papaya salad.
