Who say cereal only for breakfast? This Cereal Butter Prawn is an absolutely amazing dish make with crispy and spicy cereal flakes. Serve with steam rice.

Ingredients
8 Large prawns
½ beaten egg
1 tablespoon plain flour
1 tablespoon corn flour
½ teaspoon salt
50 g unsalted butter
2 springs curry leaves
10 small red chilli, sliced
½ cup rolled oats (grind for few seconds)
½ cup panko breadcrumbs
1 teaspoon chicken stock powder
1 teaspoon salt
Instructions
Trim the leg and devein the prawn with the shell on. Wash thoroughly.
Add egg, plain flour, corn flour and salt to the prawn. Mix until combined.
Deep fry the prawn until prawn is cooked. Drain and set aside in paper tissue to absorb excess oil.
Mix grind oats, panko breadcrumbs, chicken stock powder and salt in a small bowl. Mix until combined. Set aside.
In a pan, melt butter. Add curry leaves and chilli. Fry for few minutes until you can smell the curry leaves flavour.
Add cereal mixture and keep frying until cereal mixtures turn golden brown.
Add fried prawn, and toss around until prawn is evenly coated with cereal.
Serve with steam rice.
