Cherry tomatoes season is here, and the market is full of fresh box of cherry tomatoes. I have been resisting myself to buy cherry tomatoes because of its cuteness, as me and Dydy don’t eat much of cherry tomatoes. In the end, cherry tomatoes win, and I ended up buying a box of cherry tomatoes.
Most people will enjoy cherry tomatoes by itself like a grape, or toss it in salad. Both of us are not a big fan of cherry tomatoes, and I don’t like the taste of raw tomatoes as well. When I was young, my dad would always buy a box of cherry tomatoes whenever he see a fresh cherry tomatoes. I remembered how my dad always sprinkle sugar on cherry tomatoes, and eat it raw like a fruits.
It tastes….. yewwwwww. I hate the taste of raw tomatoes, and since then, I hardly remember eating any raw tomatoes. This doesn’t stop me from buying a box of cherry tomatoes just for the sake of its cuteness. When I told Dydy excitedly that I bought cherry tomatoes, he look at me with his eyes, questioning why am I buying it when I couldn’t even eat it.
Well, when cooked, cherry tomatoes taste not bad at all. That’s why I decided to pop cherry tomatoes on top of my mini quiche and bake it for our breakfast. This cherry tomato quiche taste so delicious, where you could feel the explosion of tanginess along with the spices in every bite of the cherry tomato quiche. I couldn’t believe that cherry tomatoes go so well in quiche.
This cherry tomato quiche is perfect for brunch along with a cup of coffee on this sunny morning. Sitting in the balcony with city view, accompanied by magazine, a cup of fresh coffee and a few slices of mini cherry tomato quiche. What’s more in life than enjoying good food and good morning coffee in the morning.
Don’t worry, this cherry tomato quiche is pretty simple to make at home. Let’s start by cracking 4 eggs in a medium bowl. Lightly beaten the eggs, and add grated carrot, ham, cheese, milk, ground cumin, salt, pepper, chilli powder and coriander powder in the bowl. Mix until all combine.
Spoon out the mixtures into muffin tins around 1/2 to 2/3 full. Don’t put too much as you still want to pop cherry tomatoes on top.
Pop few cherry tomatoes on top of the mixtures, and bake at 170C degree for about 20 – 25 minutes or until cooked. Let it rest in the pan for 5 minutes before serving.
Beside this cherry tomato quiche, I also made mini spinach and ham quiche before. It is pretty similar with this cherry tomato quiche, but using spinach instead of cherry tomatoes. Both is perfect for breakfast or brunch treat.
- 4 eggs
- 1 cup grated carrot
- 1 cup chopped ham
- ½ cup parmesan cheese
- ¼ cup milk
- ½ teaspoon ground cumin
- ½ teaspoon black pepper powder
- ¼ teaspoon chilli powder
- ½ teaspoon salt
- ½ teaspoon ground coriander
- 1 cup of cherry tomatoes
- Pre-heat oven to 170C degree.
- Crack 4 eggs in a medium bowl and Lightly beaten the eggs.
- Add grated carrot, ham, cheese, milk, ground cumin, salt, pepper, chilli powder and coriander powder in the bowl. Mix until all combine.
- Spoon out the mixtures into muffin tins around ½ to ⅔ full. Don't put too much as you still want to pop cherry tomatoes on top.
- Pop few cherry tomatoes on top of the mixtures, and bake for about 20 - 25 minutes or until cooked. Let it rest in the pan for 5 minutes before serving.
